Don't tell a soul!
Having mulled it over, I realised that there's a lot I can be sharing with you about the joys of roasted vegetables. If you're not a convert, then think of it like this. Instead of having a filling starch on the plate, like potatoes, rice or pasta, you're going to have a roasted vegetable that, besides being healthier, is tastier. Let's face it, a bowl of cooked spaghetti is insanely bland without a sauce or accompaniment of some sort and even then, you're still likely to add a pile of parmesan to get some flavour.
You may well know the joy of roasted veg, in which case I realise that I'm preaching to the converted, but if not then stick with me here for one very good reason. Something I hear a lot is that people struggle when it comes to finding ideas of what to cook. They get home quite tired, may have other mouths to feed as well, and find themselves stuck for inspiration. This is one very useful solution.
Served with a splodge of hummus and salad.
Light and easy.
The evening meal might now happen like this. Step one, arrive in the kitchen unsure what to have for dinner. Step two, turn on the oven and head for the fridge and other vegetable stores to take stock of vegetable supplies. Step three, chop veg while thinking about what else to have on your plate. Step four, put oiled and seasoned veg into the oven then crack on with other elements while vegetables get soft, crisp and brown.
Before you know it, you, along with your grateful entourage, sit down to a delicious (and dare I say, healthy) meal that was different from the last. It also has the advantage, as far as you're concerned, of being remarkably similar to prepare.
Oh! I've got your attention now? Fantastic, that's great news.
Before I go, something about the previously mentioned starchy fillers. I recommend replacing them for two reasons. One, they invariably contain little fibre, which I wholeheartedly recommend you get more of. And two, as far as your digestive system is concerned, foods such as bread, rice and pasta are like refined sugar, which you probably get plenty of. You'll be happy to hear there will be more on this thread tomorrow. In fact, I feel I should apologise that I didn't think to tell you sooner. One last thing, ignore tonight's title, I want you to sing this from the rooftops.
