  That excitement you feel is the impending blowout tomorrow. More exciting than a massive plateful of turkey and brussels sprouts or a huge pile of chocolate eggs is the towering stack of pancakes you'll be wolfing down, covered (or stuffed) with your favourite toppings. Get ready to party cos tomorrow's pancake day!

  Instead of getting to the party late, I'm here to help you arrive early. Your excitement will definitely be building with tomorrow's excuse for a pancake feast and this means putting a couple of things in place. Actually, you only need two things, pancake batter and pancake fillings, so this should be very easy.

  It may surprise you to know that you only need three ingredients for the batter; flour, eggs and milk. There are many variations but those ingredients will give you a perfectly respectable mix. In case you're not sure, for every pint of milk, use two eggs and eight ounces of flour. Start by making a well in the flour and breaking the eggs in, as you whisk the eggs and slowly incorporate the flour, pour in the milk. Variations include adding melted butter, sugar and or baking powder.

  I like to transfer the batter to a jug as it makes it very easy to pour into the pan. You only need the pan medium hot as this will cook the pancakes gently without colouring them too much. Tossing pancakes is a fun way to save weight, not only is there a bit of exercise but you're likely to drop a few so you'll end up eating less.

  Toppings. There's not much I can tell you here, everyone has their favourites and my personal indulgence is toasted almond, banana and nutella. However, since I now know how much sugar is in nutella I tend to go for a slightly healthier option. In case you needed reminding, pancakes are a great way for kids to get some experience in the kitchen and if yours are any good at it, you could even get a night off as they do the cooking and you do the eating. Now go write your shopping list.
