Green power

Yesterday's yummy seed recipe is a really great garnish for this souper simple recipe. It could be even easier and is also a great place to practice messing about with flavours and seasoning and might even be a way to get your fussy little darlings to actually eat some vegetables, especially if you chuck in some marshmallows or whatever they crave.

What am I proposing today? It's a broccoli soup and could be the easiest recipe ever. In fact, you'd better pay attention because if you blink you might miss it. Ready?, ok, here it is. Boil some broccoli, blend it and serve. That's it. In case you think I'm not being serious I made a video which you can see below. As there's not a lot of action, I've given it a groovy, (Do they say that anymore? -Ed.) backing track. Play it through some proper speakers and let the bass kick.
As you can see it's the sort of thing to get the sprog involved in, especially as they can rip the broccoli head apart while you trim the fibrous layer from the outside of the stalk. Once you've made the smooth green liquid you can either serve it up quite simply with a pinch of salt so you really get the subtle flavour of the broccoli or...

To give you a couple of suggestions, the soup I made in the video is slightly on the thin side (because I was a numpty and allowed myself to get distracted by my filming and put too much liquid in the blender.) What helped was adding some cooked, shredded savoy cabbage as that gave the soup extra body.

Other options. You can add oil or butter for a bit of richness, toasted seeds as a nice garnish, cook a bit of garlic in with the broccoli, a squeeze of lemon juice for a touch of astringency, a blob of creme fraiche looks pretty and adds creaminess. I think you get the idea and though it may seem a bit pointless, I assert that playing with seasoning like this is a great way of experimenting with flavours and ingredients as well as gaining confidence.
Don't be afraid to let the little 'uns put some marshmallows in. They've got to learn sometime.
