Quite out of hand

  Salads are never far from my mind when the weather is like this and the days are long. This little beauty that you see below is a perfect example of everything I always say about them; you just start the ball rolling and before long all sorts of ingredients are leaping at the plate.

  The plan had been nothing more sophisticated than blah blah smoked mackerel and started with a bag of leaves and a couple of fillets of the delicious, oily fish. Without realising it, at one stage I even found myself wrangling some mushroom slices sizzling in a pan with chopped garlic and then frying an egg! In fact, all that was missing was some toasted nuts and seeds.

  Apologies if I'm preaching to the converted here but if you've not discovered the joy of salad, you really must give it a go. What could be easier than chucking a bunch of ingredients at a bowl or plate and sloshing over some sauce or dressing?

  It a great outlet for a bit of creativity too as you can experiment with all sorts of dressings and spend some time organising and decorating the plate. As you can see, my style is towards the more rustic and after you've made a few, you'll start to discover what your style is like.

​​​​​​​  Anyway, there's months more of this fab weather and long days so all you need to do is make sure your cupboards and fridge are stocked with all sorts of fun ingredients and allow the creative juices to flow. Top tip, treat yourself to some top quality oil and vinegar, it's definitely worth it.
