Do you lick, suck or nibble?

  If you read the title of today's post and thought this was going to be about anything other than ice lollies then might I suggest a cold shower before you continue? A recent purchase that has recently arrived in the master kitchen is a spiffy silicone mould that can make up to ten lollies at a time. What could be better in this heat? All that was necessary are a few recipes and the tasting can begin.

  There's a bit of a thing for frozen cocktails so that was my first port of call and though some people found it a bit sharp, I was quite partial to a very refreshing cosmopolitan. Another tactic was to freeze my favourite smoothie and at the time the easiest iteration of that was quite simply blended banana and coconut milk. A dreamy combination if I may say so myself.
  As good as that combo was, there was room for tweaking so I just boosted it to also include peanut butter, soy sauce, maple syrup and of course a generous hint of dark rum. It looks like it's one of those weekends so why not?

  Before I give you my verdict, and before you run off to experiment with flavours of your own, here's a little hint which has come from my limited experience thus far. Bear in mind that within a short time of having put it in your mouth and starting to suck in a manner that... (Ok, calm down! -Ed.) you will have effectively done a good job of partially anaesthetising your tongue. This makes tasting difficult so to compensate for this you have to make the lolly mix a lot tastier by using very strong flavours.

  Also, creaminess can be added with fats so by adding the peanut butter and coconut milk to the recipe it gives it a more ice cream like texture. How was it? Oddly, especially as it's me saying this, I'd say there was a touch too much rum but otherwise it was pretty scrummy and the texture was spot on. It certainly seems like there's plenty of sunshine left for this summer so head over to eBay and get yourself a lolly mould and some sticks.
