Continued roasting
Now you've kind of got the idea of roasting veg, there's something I wanted to move onto in more detail. Old farmer Scoggis pre-empted me slightly yesterday with his fancy selection of veg, yet that is exactly the next step I was heading for. I guess he must be psychic.
You can roast pretty much anything so you could end up with some pretty exotic mixtures on the tray but that's fine. Roasting a variety of veg isn't an exact science and you'll get better at working out what size everything needs to be so it's all cooked at the same time but if you're not sure, spread the different veg out over a number of trays. To give you an sense of the possibilities, for some reason I was served a lot of roasted brussels sprouts over Christmas so it seems nothing is off limits.
However, all this enthusiasm was born from my wanting to encourage you to cook some comforting, filling and warming veg as a way to stay warm and cosy while we wait for the fine weather to return and I haven't forgotten part two of my duties, serving suggestions.
Many posts ago I suggested thinking of the roasted veg as a the centre of the meal and finding accompaniments so here's where I get to offer some ideas. Actually, as I start to compose a list in my head, I realise it would be easier to tell you ways that would be foolish and a bit pointless such as sprinkled with ground glass or as the topping on a bleach soufflé. But you didn't need me to tell you that.
Starting with the very simple For example, for a snack today I had a bowl of spinach and broccoli soup and I decorated the top with a variety of roasted veg. Unfortunately, being a cockwomble of the highest order, I picked up the camera and got distracted before I took the... (We get the idea. -Ed.). As a result, the picture is of... (Yes, we still get the idea. -Ed.).
