A cuddle for Valentine's

  How much do I love you this Valentine's day? Enough to keep you warm with a big bowl of soup. Butternut and ginger cos it's bastard freezing outside and because I know you like that sort of thing, I'm even going to slip in a bit of turmeric. So grab a big pot and away we go.

  Drizzle a bit of oil on the bottom of the pan, rough chop a couple of onions and spread them out with a little sprinkle of salt. Next up, peel, seed and rough chop the butternut squash and put this on top of the onions with another little sprinkle of salt. The salt is only there to draw out the liquid so you don't need a lot. Peel and chop a knob of ginger and chuck that in along with about a teaspoon of tumeric or a few cloves of garlic depending on how you feel.

  Start with a high heat and listen out for the onions. When they start to sizzle, drop the heat right down and put a tight fitting lid on top. Now grab the remote and pull up a pew in front of the curling cos you've got a while to wait. After about forty minutes, go back and have a peek. The veg at the bottom of the pan will have started to sweat and soften so give it a quick stir, put the lid back on and get back to the curling.

  It's not worth getting off your arse for at least another half an hour. What you're looking for is for the squash to be nice and soft. You'll also see a load of liquid in the bottom of the pan. When you're there it's time to blend it all. If there's not enough liquid to give you the right consistency, feel free to add a bit of milk.

  That's about it for the soup. Garnish it with a bit of olive oil and maybe a few toasted pumpkin seeds if you're feeling creative and sit back down with a large bowl in front of the figure skating or ice hockey, I haven't checked the schedule. Anyway, happy Valentine's and bon appetite.
