Chip sand ips
As you know, that should read, 'chips and dips', but you knew that so let's move on. We're going to move straight past the bit where I would normally take some time to tell you about the 24 degrees and glorious sunshine here, and get straight to where I left off yesterday.
As you remember, I was talking about baked tortilla chips being a delicious and easy snack for you to make. One thing I didn't mention is what a great recipe it is to get the niƱos involved in, especially as they can go wild with making up their own flavours while simultaneously learning about spices. Bring tortilla or I claw your eyes out.
Where I left off yesterday was the bit where I was going to tell you about what to dip them in. You know all about hummus, or should do by know as I've gone on about it enough, so we're going to move on to another massive favourite, guacamole. As well as being super delicious and super healthy, it's super easy and that means the kids can do it too.
This is especially important as summer is on the way and you want to make sure the little ingrates serve their purpose as I'm pretty sure you're not charging them rent or making them pay for their meals. Instead, teach them to mix rum and coke, make tortillas and guacamole and get them to deliver it to you wherever you've collapsed for some peace and quiet. Result.
I'll give you a more sophisticated version tomorrow but for the quick and simple version, get a soft/ripe avocado, scoop the flesh into a bowl, add a squeeze of lemon juice, some salt and pepper and mash it all together with a fork. No, really, that's it. Like I said, I'll get sophisticated tomorrow but as you'll be finding it hard to restrain yourself from eating your irresistible tortilla chips you don't want to be faffing around.
